Semi-solid fermentation (also called solid-state fermentation, Koji fermentation and surface fermentation): There are a number of methods that utilize this fermentation technology. At Specialty Enzymes (SEB), we utilize trays of fungal organisms in a solid state, hydrated to 50% water and maintained by overhead sprays. This technology is especially useful for certain pectinases and some hemicellulases. Once fermentation is complete, the solid materal is mixed in water and filtered to collect the enzymes.
